Hot smoked salmon tartare with an avocado mousse, cucumber, balsamic pearls, squid ink cured salmon gravlax & curly endive

Pan fried Lyme Bay scallops with a chorizo & red pepper jam, roasted cauliflower cream, char grilled cauliflower & basil oil

West Bay Lobster & roasted chicken broth with wild mushroom & Lobster crispy won tons & Julien of vegetables

Grilled baby aubergine with goat’s cheese, sun-dried tomatoes, toasted hazelnuts, char grilled red pepper, confit cherry vine tomatoes, basil & a red pepper pesto

Pan fried pigeon breast with parsnip cream, pancetta braised puy lentils, pickled walnuts & a red wine reduction

Grilled fillet of Seatrout with a Somerset cider & Clam cream, marinated Seatrout belly, saffron potato fondant & sautéed samphire grass

Star anise braised West country Pork belly with crispy crackling, toffee apple, cooking liquor reduction, roasted garlic & truffle mash & char-grilled baby leeks

Salt Cured Cod fillet with a crispy Chicken skin, pine nut &dill crumb, Oyster & dill mayonnaise, blow torched cucumber & pickled cucumber & jersey royals

Thai red vegetable curry with marinated angel hair noodles

Grilled Leg of Lamb steak with celeriac dauphinaise, char grilled hispi cabbage, mint butter, roasted heritage carrot, carrot & cardamon puree & pickled carrot
